Keto tuna cheese melt

Ingredients

Oopsie bread

  • 3 eggs
  • 4½ oz. cream cheese, softened
  • 1 pinch salt
  • ½ tbsp ground psyllium husk powder
  • ½ tsp baking powder

Tuna salad

  • ¾ cup mayonnaise or sour cream
  • 4 celery stalks, minced
  • 2 oz. dill pickles, chopped
  • 8 oz. tuna in water drained
  • 1 tsp lemon juice
  • 1 garlic clove, minced
  • salt and pepper, to taste

Topping

  • 10 oz. shredded cheese
  • ¼ tsp cayenne pepper or paprika powder

For serving

  • 5 oz. leafy greens
  • olive oil
