Donuts Ingredients:
Flour mixture:
1 1/3 cup Almond flour
1/2 cup Coconut flour
2 tbsps Psyllium husk
2 tsps Xanthum gum
2 cups Water
1/2 cup Coconut oil
3 tbsps Equal Gold
1/2 tsp Salt
6 Eggs
2 tsps Vanilla
2 tsps Baking powder
Fresh strawberries (sliced and whole)
Cinnamon Sugar Coating:
1/2 tsp Cinnamon powder
1/4 cup Equal Gold
3 tbsps melted Butter
Whipped Cream
Ingredients:
Ice and water
4 oz Cream Cheese
250 ml chilled All Purpose Cream
4 or more packets of Equal Gold (adjust to your liking)
1 tsp vanilla
Whipped Cream Procedure:
Put enough ice and water in a large, stainless mixing bowl. Place a small stainless bowl or a glass bowl on top of the large bowl and whip the cream cheese using a mixer. Pour 1/2 of the cream into the small bowl and lightly whip. Then, add 1/2 of the cream again and whip. Gradually add Equal Gold and vanilla while whipping. Continue whipping until stiff peaks. Place the whipped cream in a piping bag with your desired tip and refrigerate.
Donuts Procedure:
Preheat oven at 220c.
Sift and mix almond flour, coconut flour, psyllium husk and xanthum gum until well combined. Set aside.
Heat water. Add coconut oil, Equal Gold, and salt.
Low simmer and add flour mixture. Mix constantly until well combined.
Continue mixing for a few minutes until the mixture pulls away from the pan and forms into an elastic dough.
Transfer it to a mixing bowl and let it cool down for 5 minutes. Note: The dough should remain warm.
Add one egg at a time, while mixing until well combined. Mix vanilla and baking powder.
Let it rest for 15-20 minutes.
Grease the donut pan. Use a piping bag with no tip and put enough of the dough on each cavity.
Bake for 15 minutes. Let it cool down.
Assembly:
Brush each donut with melted butter and dunk it into your cinnamon sugar mixture until well coated. Make sure to include the sides.
Put whipped cream and sliced strawberries.
Top it with another donut and one whole strawberry. Enjoy!
