Low Carb Buko Pandan Gelatine

Ingredients:

1. Pandan leaves ( screw pine)
2. Pandan extract
3. Green food coloring/or buko pandan flavor
4. Knox jelly powder
5. Buko ( young coco meat)
6.APC
7. Almond milk or heavy cream
8. LC sweetener of your choice

Direction:

1. Boil pandan leaves in 5 cups of water until the leaves turn slightly brown.
2. Dilute 4 sachet knox powder in 0ne cup of room temp. water.
3. Put in 2 drops of pandan extract and one drop of green food coloring, MIX.
4.. Strain the boiled pandan water and mix in the diluted knox powder.
4.Stir properly and let it cool in the air before putting it inside the fridge.

Next step :

1.Cut the gelatine into cubes in your desired size.
2. Mix in the buko meat
3. Put in APC and heavy cream/ almond milk
4. Sweeten according to your taste.
