Sugar Free Mango Tart
For crust:
11/4c. All purpose flour
11/2 Tbsp. Equal Gold zero calori sweetener
7 Tbsp. Salted butter,cold cut into cubes
1 egg yolk
1/2 tsp. Vanilla essence
21/2 tbsp. Ice cold water
Filling:
1 c. Mango puree
1/4 c. Equal Gold zero calorie sweetener
2 tbsp. Lemon or lime juice
2 whole egg (large)
1 egg yolk
1/4 c.unsalted butter
Procedure:
Step 1:preheat oven 170•c.(1min.)
Step 2:for the crust,combine flour,equal gold zero calorie sweetener,salt and butter.Mix finger tips until small size butter is achieved.add yolk and slowly stir add ice cold water with the flour mixture using finger tips.Knead until just combined.Form into ball and refrigerate 10mins.
Step 3:dust the dough with flour and roll into a round size bigger than tart pan.Place the rolled out dough ang lightly press evenly into the bottom and of your tart pan.Put in the oven bake atleast 20mins.until lightly golden brown the crust(p.s: i want my crust lightly toasted?)
Remove from the oven and set aside to cool completely
Step 4:mix mango puree,equal gold Zero calorie sweetener,lime juice,eggs then cook in low fire until the mixture is thicker.Off the fire then put unsalted butter into cube 1by1.remove from the fire and let it cool.
Step 5:pour the mango curd into the bake tart .put a slice mango on top.
