- Ingredients:DRY:1 and 1/4 cups (156 g) all-purpose flour, spooned and leveled3/4 cups unsweetened cocoa powder1 teaspoon baking powder1 teaspoon baking soda1/2 teaspoon salt3/4cup EQUAL GOLD2/3 cup (113 g)Dark chocolate chipsWet:1/2 cup (120 ml) canola oil1 cup (240 ml) whole milk, at room temp.2 eggs, at room temperature1 teaspoons pure vanilla extractToppings:Dark chocolate, chopped on the topInstructions1.Preheat the oven to 350°F (177°C). Line a 6-cup muffin pan with muffin or cupcake liners.2.Sift the flour, cocoa powder, baking powder, baking soda,2/3c Dark chocolate chips, and salt together in a large bowl. Mix in sugar. Set aside.3 .In a medium bowl, whisk oil, milk, eggs, and vanilla until combined. Pour the wet ingredients into the dry ingredients and, using a rubber spatula or wooden spoon, fold together until just combined. Do not overmix!4.1/4c batter into the cupcake/muffin liners, With dark chocolate cubes on the top.Bake for 25-30 minutes 180°c, or until a toothpick inserted in the center comes out clean. Transfer muffins to the wire rack to cool completely.
